    Rinse basmati rice, soak 15 min, drain.

    Heat ghee. Add cumin, cardamom, cinnamon, bay — sizzle 30 sec.

    Add onion, sauté until golden.

    Add carrot and peas, cook 2 min.

    Stir in rice, then add water. Bring to boil.

    Cover and simmer 15 min on low. Rest 5 min.
