Instructions

    Soak peeled potatoes in cold water 2 hours, changing water twice.

    Bring broth to simmer with guascas/oregano.

  3. 3

    Add potatoes and corn. Cook 20 minutes until potato is soft.

    Some potato will naturally thicken the soup.

    Add shredded chicken, heat 3 minutes.

    Serve with a dollop of sour cream and cilantro.
